The Mario stuff suffers from a severe lack of piledriving. Ryu punching ducks, however, would make a great mini-game.

And it's exactly what it is too. All of these are MUGEN character where someone has taken the time and effort to program their character into a mini-game of some sort for the other players to take on (yes, the entire 1-1 Super Mario level is a single character).
Didn't anyone know that about Ryu? Thats how he trains... He locks himself up in a room full of ducks and punches the shit out of them... thats how he perfected the shoryuken
