Go to Game Options, and change the number of players.
Don't remember know, but you have option from to 2 to 4 players. If you choose four players, each char is reserved to a player like in the 4 players' arcade (Player 1 = Mummy, and so on). With the 2 players option, you're free to choose.

Oh! I misinterpreted the "players" option to mean how many lives you had per continue or something along those lines.
